When choosing a new cooktop for your kitchen, there are three main types to consider: gas, electric, and induction cooktops.

  • Gas cooktops are a favorite of chefs everywhere for their even heat distribution and their capacity for more precise control of cooking temperature. These use a flame that is typically fueled by propane or natural gas, and although they may be more expensive on first purchase, they cost less to operate over the long term. When selecting the best option for your kitchen, remember that most gas cooktops will require both gas lines and electrical connections to accommodate fuel and ignition.

  • Electric cooktops are popular for their simple installation and how easy they are to clean. These use an electric heating coil which is usually concealed under a smooth glass cooktop. Many prefer electric to gas cooktops as they don’t have any open flame and you never have to wait for them to light. However, they can still take a bit of time to heat up, and don’t provide quite the same precision of temperature control as gas cooktops.
  • Induction cooktops are a relatively new option that use magnetic induction to directly heat the pot or pan that you are using. This quickly and efficiently cooks the contents of the pan without distributing any excess heat into your kitchen. These offer the best of both other cooktops’ features with the precise temperature control of gas and the easy to clean flat surface of electric. They are also one of the safest stove options as their burners aren’t a fire hazard or burn risk since only metal objects can conduct the heat from the burner. It is important to note that this type of stove only works with pots or pans that have some iron in them – luckily, most cookware does. However, copper or titanium pots will not be compatible with induction cooktops.
